Add your scheduling page (Calendly, Microsoft Bookings, Google Calendar's appointment page or your own) as the calendar icon, or as a banner with a Book a call button. Anyone reading your email can then pick a time in one tap.

The calendar icon is quiet and always there. A banner is louder: "Book a 15 minute call", drawn as a real button with text, so it reads with images off.

Each link in your signature is counted when clicked, so you can see how often the booking link is used.

No. There is no tracking pixel in any signature. Clicks on your signature's own links are counted, and that can be switched off on your dashboard.
Current Outlook plays the animation unless animation effects are switched off in Windows; older versions show the first frame. Every design starts on its finished frame, so either way they see a complete signature.
